Tomato Sugo Arrabbiata

Quick to make and goes well as a sauce with pasta, rice, couscous or stuffed vegetables.


Ingredients

  • 100 g onions, in pieces (halved or quartered)
  • 2 cloves of garlic
  • ½ chilli pepper, deseeded
  • 25 g olive oil
  • 800 g ripe tomatoes, quartered and deseeded
  • 30 g tomato puree
  • 3 stalks of basil, picked
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon sugar 

PREPARATION

1. Put the onion, garlic and chilli pepper in the mixing bowl and chop for 3 sec./speed 6.

 

2.  Add the oil and saute for 3 min/120°C/speed 1.

 

3. Add the tomatoes, tomato puree, basil, salt, pepper and sugar and chop for 4 secs/speed 5.

 

4. Instead of the measuring jug, place the simmer basket on the lid of the mixing bowl, allow to simmer for 15min/Varoma/counterclockwise/speed 1 and serve immediately.
