Grissini Breadsticks are easy to make at home as you just need a few ingredients. They taste like the ones you get in Italy!
I love serving them with prosciutto, olives and cheese.
Ingredients
-
- 280 g water
- 1 tsp malt
- 15 g fresh yeast
- 500 g flour
- 80 g extra virgin olive oil
- 1 tsp salt, + as required
- 50 g durum wheat semolina
- 1 - 2 tbsp sesame seeds (optional)
PREPARATION
1. Put the water, malt and yeast in the mixing bowl, mix 1 min/37°C/speed 2 .
2. Add the flour, 60 g olive oil and salt, knead 3 min/kneeding functiion.
3. Place the dough on the floured work surface and shape it into a block, brush the top with oil, cover the dough with plastic wrap and leave to rise until doubled in volume (about 1 hour).
4. Preheat the oven to 200°C. Prepare the baking tray by dusting it with semolina.
5. Take the dough and dust it with semolina. Cut slices of dough about 1 cm thick. Make each stick thin by stretching it at the ends to the same length as the baking sheet. Place the grissini side by side on the baking tray.
6. Sprinkle the grissini with some salt, sesame or poppy seeds as desired.
7. Bake for 15-20 minutes in a hot oven (220°C), taking care not to darken the grissini too much.
Let cool on a wire rack or on the baking tray and eat cold.
